In the cellar
Produced from low yielding bush vines on the Simonsberg mountain. Grapes are handpicked and sorted in the cellar into stainless steel tanks for fermentation. Pump overs every 2 hours for the first 3 days and then press early to finish fermentation without skins, this results in a finer tannin structure. The wine is then transferred to French oak barrels for a 14- month ageing period, with 13% new, before filtration and bottling in June 2024.
