In the cellar
The juice of the grapes was barrel-fermented in a selection of 228 litre Burgundy-shaped French oak barrels (39% new, 43% second-fill and 18% third fill Nevers and Burgundian oak barrels). The wine was then matured “sur lie” in the barrel for nine months with occasional rolling of the barrels to accentuate the leesy character. 8% tank-fermented Chardonnay was blended with the barrel-wine to ensure well-balanced citrus flavours. Both the tank and barrel-fermented Chardonnay underwent malolactic fermentation.
In the vineyard
The distinct ravine in the Stellenbosch Kloof ward allows the opportunity to harness the cooling influences from the False Bay on our south and east facing slopes. This captures the intense flavour compounds found in the grape skins. The grapes were harvested from the 24th of February to the 22th of March 2022 at an average of 21.3°B.

About the Wine Estate
Gary and Kathy Jordan have been making world-class wines since 1993 on a farm with a history going back over 300 years. He’s a geologist, she’s an economist. Gary’s parents, Ted and Sheelagh, bought the now 164-hectare Stellenbosch property in 1982, and embarked on an extensive replanting programme, specializing in classic varieties suited to the different soils and slopes.
