A true expression of the Stellenbosch Simonsberg terroir and Cabernet Sauvignon. Deep red garnet in colour with a complex combination of black fruit, blackcurrants and plums with hints of violets backed by soft aromas of cedar and cigar box. A well-integrated tannin structure on the pallet makes for a smooth long lingering finish.

In the cellar
Grapes were harvested by hand early in the morning at 25.5 – 26 balling. It was cold-soaked for 48 hours before selected yeasts were added for alcoholic
fermentation. During the process of fermentation flavour and colour are extracted by a combination of punch downs and pump overs every 4 hours with the must reaching a maximum temperature of 29°. The wine was transferred to 225l French oak barrels for ageing. For this vintage, only 15% new oak was used for 22 months.
