In the cellar
Natural settling and extremely low fermentation temperatures (10 -12 degrees Celsius) with 5 different commercial yeast strains are essential to preserving the beautiful flavours this Queen of the Grapes can offer. Lower average temperatures caused slower ripening of the grapes. This in turn let to richer wines at lower alcohol levels with great fruit concentration.
In the vineyard
The grapes used for this wine are harvested from 5 - 18 year old trellised and 39 year old bush vine from the Bottelary Hills. As tradition has taught us, we still perform a sectional harvest on our Sauvignon Blanc. A third is picked at 18 Balling (greener flavours), a third at 20 Balling and a third at 23 Balling (more tropical flavours). These three harvests are fermented separately to create three tanks capturing all the characteristics this enchanting grape can offer.

It would be a great accompaniment to dishes like triple baked goat’s cheese soufflé (if you haven’t had one, our winemaker should prepare you one) or fresh seafood salad with a mustard honey dressing smothered in fresh asparagus.
About the Wine Estate
Let's take a journey back to 1692 when Douwe Gerbrand Steyn was granted ownership of Stellenrust. Steyn was a man of many talents, not only did he play a vital role in establishing the East Indian Spice Route, but he was also a master stone mason who helped build the impressive Castle of Good Hope. Steyn was also one of the first pioneers to plant vineyards and produce wine in the Cape. He was truly a man ahead of his time.
Fast forward to 1928, and Steyn's legacy was still going strong. The Stellenrust 'finding rest in Stellenbosch' trademark was registered and still stands to this day. Through the years, Stellenrust has remained a family-owned winery, and it's no surprise that their winemaking skills have been passed down through generations.
Today, Tertius Boshoff (winemaker) and Kobus van der Westhuizen (viticulturist) are keeping the Stellenrust legacy alive. They are committed to producing wines that embody the estate's motto, 'Where excellence meets winemaking'. With each bottle, they continue to capture the essence of Stellenrust's rich history and the passion that Steyn instilled in this beautiful estate.
