In the cellar

The juice of the grapes are drawn off into a special selection of barrels and allowed to ferment naturally. Fermentation took just under 8 months to finish and the wine was kept on the fermentation lees for an additional 1 month. Time spent on lees in barrel: 9 months in oak: 90% French and 10% Hungarian oak.

In the vineyard

Grapes for this wine was harvested between 22 and 24 balling and the juice allowed to settle without enzymes over several days.

About the Wine Estate

Let's take a journey back to 1692 when Douwe Gerbrand Steyn was granted ownership of Stellenrust. Steyn was a man of many talents, not only did he play a vital role in establishing the East Indian Spice Route, but he was also a master stone mason who helped build the impressive Castle of Good Hope. Steyn was also one of the first pioneers to plant vineyards and produce wine in the Cape. He was truly a man ahead of his time. Fast forward to 1928, and Steyn's legacy was still going strong. The Stellenrust 'finding rest in Stellenbosch' trademark was registered and still stands to this day. Through the years, Stellenrust has remained a family-owned winery, and it's no surprise that their winemaking skills have been passed down through generations. Today, Tertius Boshoff (winemaker) and Kobus van der Westhuizen (viticulturist) are keeping the Stellenrust legacy alive. They are committed to producing wines that embody the estate's motto, 'Where excellence meets winemaking'. With each bottle, they continue to capture the essence of Stellenrust's rich history and the passion that Steyn instilled in this beautiful estate.
