The wine has a crimson colour with a dark core. A perfume of wild blackberry and cranberry fills the glass with gentle hints of violets, cocoa and cured meat savouriness. On the palate, there are complex flavours of creamy strawberry, ripe plum and a touch of tilled earth and fynbos. It is a well-balanced wine with fine, well-integrated tannins that leaves a long dry finish.

In the cellar
The grapes come from a selection of three estate vineyards with high attention to detail in vine management and crop control. After meticulous sorting in the vineyards during the harvest, the grapes were processed and taken to the tank where fermentation took place over 14-21 days, with 3-4 pumpovers per day. After being pressed, the wine was taken to the barrel for malolactic fermentation after which it spent 12 months in 40% first fill French oak barrels (with 15% 2nd fill, 20% 3rd fill and 25% older barrels.
In the vineyard
Due to the prolonged drought, which some believe to be the worst in 100 years, accompanied by water restrictions, the 2019 vintage was really challenging. The expertise of the vineyard team and cellar were definitely put to the test by the warm and dry climatic conditions. In the vineyard and in the cellar, we adapted our practices to decrease the effect of water shortage. The dry weather throughout the season had its advantages as vines were healthy, with little or no pests or diseases recorded in most regions. The dry, warm weather resulted in smaller berries but with great intensity. The Cabernet Sauvignon did not disappoint and delivered wines with an abundance of fruit and beautiful balance.
Ageing
Soft and perfectly drinkable now but should benefit from further ageing over the next 6 to 8 years.

Enjoy with Braised short rib with turnips and carrot purée. Deboned lamb rib with charred cauliflower and jus. Flavourful and heartier pastas.

About the Wine Estate
Simonsig Wine Estate is synonymous with the history of the South African wine industry, the Stellenbosch wine region, and the Malan family name. These elements are intertwined in this family-owned farm, where the late Frans Malan produced the first bottle of our much-loved Kaapse Vonkel, South Africaʼs first Méthode Cap Classique made in the classic bottle-fermented style. He is also honoured for co-founding the thriving Stellenbosch Wine Route, a first in its time. Today, his legacy lives on through his sons, Francois and Johan, and grandchildren Christelle and Michael, the 2nd and 3rd Malan generations at Simonsig Wine Estate.
