In the cellar
Cabernet Sauvignon was fermented with 100% whole berries in small 1.5 ton tanks with punch downs being done twice daily.
The petit verdot, due to its firm tannins was hand sorted and whole berry fermented with a punch down every 2nd day for 5 days.
In the vineyard
Just above Supers lies Boneyards. This is usually a bigger wave, and more crunching, thus the name boneyards. The rides are not as long as Supers but there
are good barrels to be had breaking left and right. This wine also relies on a synergy of elements; unique Stellenbosch grapes, grown in mineral rich soil,
ripened by the African sun & soothed by her breezes. These parts all make up what is a dark, rich wine showing concentrated fruit and a seamless integration of oak.
