The Private Collection Chardonnay 2023 has layered tropical fruit notes of apricot, paw-paw and mango lifted with fresh citrus zest and blood orange notes. The undertones comprise of layered biscotti and shortbread characters. The wine has a zesty entry with a broad mouthfeel and lingers delightfully on the palate.
The 2023 vintage gave a phenolic ripeness that was slightly delayed. It was important to be patient and wait for the aromatics to develop before picking. This resulted in great complexity and a beautiful natural acidity to the wine.

In the cellar
Predominantly the whole bunch pressed, with minimal sulphur use before fermentation. The juice is racked to barrel after one day of settling and a portion is left to ferment naturally. Whole bunch pressed. Partial natural ferment. Left on lees for 11 months. 50% completed MLF. 13% new oak. Rest in older 500L and 300L barrels.

About the Wine Estate
When Adrian and Birgit Bührer took ownership of Saxenburg in 1989, the farm, and South Africa as a nation, was in dire need of rejuvenation. Thanks to their grit and unflappable perseverance, they tenaciously stuck to their vision. They traded their familiar surroundings of Switzerland for a homestead in the Cape Winelands. Fiona and Vincent are the second-generation Bührer Family custodians of Saxenburg Wine Estate with the mission to showcase our incredible terroir in the Polkadraai Hills and to create special Saxenburg moments with people from all walks of life.
