Neil Ellis Jonkershoek Amica Sauvignon Blanc 2021
Amica, derived from the Latin Amicus, can be described as a gathering of friends. It tells the story of friends sharing good food around a table. This is a barrel-fermented Sauvignon Blanc, influenced by wild fermentation and oaking in French oak. The result is a complex, textured expression of the variety. Scents of fruit blossoms supported by notes of honeysuckle, white nectarine and melon. The mouth feel is fresh with flinty minerality while contributing to a vibrant lengthy finish
The source of the fruit is a single vineyard site from the Jonkershoek Valley, Stellenbosch. The soil consists of decomposed granite and quartz.

Winemaking rules were broken to create a sophisticated style of South African Sauvignon Blanc. Made through wild fermentation and oaking in old French oak, the grapes were whole bunch pressed using a Champagne pressing cycle to ensure only the finest quality juice being used. The fermentation occurred naturally in 500 â„“ puncheons of which 20% was new. The wine spent 9 months in 500 â„“ French oak barrels.
Bottled in November 2020.

In 1984 Neil Ellis sourced grapes from vineyards not of his own and produced wine in rented cellar space. These grapes were sourced in the Stellenbosch district and meant a lot of nosing around the restrictive quota system prevalent at the time.
His vision, the pursuit of quality, extended out of the cellar and into the vineyards where varieties would excel and best express a particular style of wine reflective of their environment.
