In the cellar
The grapes are hand-harvested in the early morning to protect the fruit and preserve freshness. Pre-sorting occurs in the vineyard, followed by a meticulous hand selection of bunches in the cellar. 100% whole berry fermentation in small open-top fermenters ensures the preservation of fruit purity, allowing gentle extraction of silky, well-integrated tannins.
Fermented using wild yeasts, this wine undergoes 24 months of ageing in a Combination of new and 2nd fill barrels, imparting layers of complexity while maintaining the integrity of the fruit.

From a single vineyard in the Helderberg, Stellenbosch, this Cabernet Sauvignon is a pure expression of site, structure, and sophistication. The vineyard, rooted in ancient decomposed granite soils, produces intensely flavoured berries, with depth and elegance characteristic of the region.
