The dense opaque wine has beautiful, perfumed notes of fresh violets that melt away to reveal ripe, intense notes of crème de cassis, blueberry crumble and plum. The wine has gravitas, intensity and a presence that is neither heavy nor overpowering. A remarkable synergy between these four cultivars creates a seamless integration of oak spice and oak tannin entwined with the Cabernet’s masculinity and the feminine Merlot, adding real depth and complexity to the wine.

In the cellar
Grapes were crushed, destemmed and cold soaked for two days prior to inoculation. Fermentation peaked at 28°C. With regular and controlled pump overs, sufficient colour and tannin structure were extracted. After extended maceration, the skins were gently pressed. Malolactic fermentation took place in tank and barrels. 15 months in 100% French oak barrels. 39% first fill and 61% second fill.
In the vineyard
A selection of two magnificent vineyard sites in Stellenbosch. The one at the upper end of Devon Valley has decomposed shale soils. With a 15%-20% clay content it lends itself intrinsically to Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. The second vineyard in the heart of Stellenbosch, with its weathered granite soils adds finesse and flair to the wine versus the bold and black fruit from Devon Valley. During harvest time meticulous tasting of fruit is crucial to determine when optimum phenolic ripeness is reached before we commence with picking.
