In the cellar

The grapes were harvested o at 25.5°b. First cold-soaked and then inoculated. Fermented at 26 - 28°c for about 5 days. Pumped over three times daily during alcoholic fermentation. Malolatic fermentation took place in barrels. The wine spent a total of 22 months in new and second-fill French oak barrels.
