The Private Collection represents the cornerstones of Saxenburg. A perfect expression of terroir, and uncompromising consistency in both elegance and value.  Saxenburg Private Collection Syrah 2021 has a beautiful ruby colour to the wine.

The nose has alluring spice notes of freshly crushed black pepper, white pepper, cloves, cumin and coriander seeds. The spice notes are lifted by violet blossoms, cassis, black cherries and ripe blackberries. These notes follow through to the palate with a fine velvety tannin and a lingering aftertaste.

All the hallmarks of a sumptuous Syrah with balanced fruit and spice on the nose. The wine has excellent natural acidity, typical of the 2021 vintage. The palate is fresh, inviting and well-integrated. It has a medium body with a lingering finish. New practices such as the submerged cap, and whole bunch ferments have been used, which have added layered complexity to the wine.

In the cellar

Various parcels were picked and fermented separately. Some parcels were left to ferment as whole bunches and some destemmed fully, but no crushing was done on any component. In total 20% of the final blend was from the whole bunch, and 10% from the submerged cap fermentation. Extraction protocols were based on daily tastings and therefore differed for each component, but varied between 3 pump-overs a day and 1 pump-over once every 2nd day. The components were aged separately in French oak barrels (10% new) for 12 months before a rigorous barrel selection and blending process.

In the vineyard

Sourced from selected, west- and south-west facing vineyards on Saxenburg, all planted on decomposed granite. Strict pruning, suckering and canopy management ensure a balanced yield and even ripening.

About the Wine Estate

When Adrian and Birgit Bührer took ownership of Saxenburg in 1989, the farm, and South Africa as a nation, was in dire need of rejuvenation. Thanks to their grit and unflappable perseverance, they tenaciously stuck to their vision. They traded their familiar surroundings of Switzerland for a homestead in the Cape Winelands. Fiona and Vincent are the second-generation Bührer Family custodians of Saxenburg Wine Estate with the mission to showcase our incredible terroir in the Polkadraai Hills and to create special Saxenburg moments with people from all walks of life.
