In the cellar
Grapes were crushed, destemmed and cold soaked for two days prior to inoculation. Fermentation peaked at 28°C. Sufficient colour and tannin structure were extracted with regular and controlled pump overs. After extended maceration, the skins were gently pressed. Malolactic fermentation took place in tank and barrel. Barrel maturation for 14 months in 100% French oak, 44% first fill and 56% second fill.
In the vineyard
A selection of two magnificent vineyards in Stellenbosch. The one in Upper Devon Valley has decomposed shale soils with a 15%-20% clay content that it lends itself intrinsically to Cabernet Sauvignon. The four different Cabernet clones adds diversity of bold and black fruit. The second vineyard, in the heart of Stellenbosch, with its weathered granite soils adds finesse and flair with perfumed fruit. During harvest time meticulous fruit tasting is crucial to determine when optimum phenolic ripeness is reached for picking to commence.
