In the cellar
Grapes are hand-picked, and transferred to our cellar. Following fermentation and subsequent maceration, the wine is blended and transferred to a combination of French barrels, Foudre, and cement tanks. After aging for a total period of 24 months, a final blend is crafted and bottled. The wine is then released after a resting period of 6 months.
In the vineyard
Between False Bay and the vineyards of Le Chant, lie only gently rolling hills nothing to impede the progress of the sea breezes inland. The vineyard aspect, most south west, means that our vineyards receive the full benefit of the breezes’ cooling nature. This influence allows the vineyards to be farmed according to organic principles.
