In the cellar
The grapes were harvest from two different blocks, the one much younger than the other. The two batches were fermented separately. After malolactic fermentation the wine was taken to small French oak barrels for 12 months. 25% of the oak is first fill. Before bottling careful blending was done to produce this very elegant wine.
In the vineyard
All the grapes come from Yonder Hill’s vineyard at the foot of the Helderberg Mountain. Here we have decomposed granite soils, resulting in less vigorous growth of the vines giving smaller berries and thus more intense aromas.
Ageing
French oak barrels for 12 months. 25% of the oak is first fill.
