The Roos Family Cabernet Sauvignon is a wine for the long run. Made in a classical style, this Cabernet Sauvignon has the potential for decades of ageing. Dark colour, cloves and lead pencil nose, tannin still tight at this stage, should start to open a year or so after bottling.

Specifications
In the cellar
Fermentation took place over 7 days on the skins in closed tanks at 20 – 25 0C, pump over every two hours, pressed with pneumatic press. Spontaneous malolactic fermentation occurred.
In the vineyard
The vineyard is located 150m above sea level on a north-west facing slope in the Bottelary Hills of Stellenbosch. Gravel soil offers less vigorous growth which, together with sufficient heat due to the slope and altitude, leads to ideal ripening conditions for fully ripened grapes.
Ageing
Perfect to enjoy now, can be aged for five years in the proper conditions.

About the Wine Estate
Mooiplaas Wine Estate and Private Nature Reserve boast a pristine natural beauty. Owned and managed by Tielman and Louis Roos, the Mooiplaas vineyards lie on steep slopes of ancient mineral rich soils in the Bottelary Hills of Stellenbosch, overlooking Cape Town. Mooiplaas is a historic and traditional working wine estate, bought by Nicolaas Roos in 1963. He was joined by his two sons Tielman, viticulturist, (1980) and Louis, winemaker (1983). The history of the farm dates back to 1806, with the manor house on the estate – a national monument – an impressive example of Cape Dutch architecture. In 1995 Mooiplaas established a Private Nature Reserve, dedicating 70 hectares to the conservation of endangered Fynbos species. Tielman and Louis produce a range of environmentally friendly wines rooted in tradition and artisan techniques to reflect the unique terroir.
