In the cellar
Minimal-intervention winemaking: fermented in stainless steel tanks, then left on the fine lees for further development before stabilisation, filtration and bottling.
In the vineyard
From low-yielding vines planted in 1997 and 1998 on two of our highest slopes, one facing south, the other south-west, cooled by Atlantic Ocean breezes off False Bay. Both vineyards are trellised, one is dryland.
