In the cellar
At the cellar the grapes for this wine go through another selection process before de-stemming. No crushing of the berries take place and fermentation starts naturally after 3-4 days of cold-soaking at 15C. The grapes are left on the skins for 25-35 days to create velvety smooth tannis.
In the vineyard
Only grapes of exceptional quality are selected and sorted in the vineyard leaving sun-burnt berries on the vines.
Ageing
This wine drinks well now. It can age for a further six to eight years to allow the flavours and bouquet to develop.

About the Wine Estate
The exclusive winery of Peter Falke is nestled against the majestic slopes of the Helderberg Mountains in the heart of the Stellenbosch winelands, South Africa. Groenvlei Farm is home to rambling magenta bougainvillea, delicate scented roses and wild lavender growing alongside carefully cultivated vineyards. Dating back to the 18th century, the traditional gabled Cape Dutch buildings of the wine estate belie a contrasting modernity within. The stately old homestead is partnered by a “boutique” winery, contemporary wine tasting room and luxurious outdoor lounge which have established Peter Falke Wines as the most elegant and serene sundowner retreat in the winelands. The Falke family has been doing business in South Africa since 1969. Peter Falke was born in Germany. His dream to own a farm came true when he acquired Groenvlei in 1995. His wife, Danià¨le is French and an interior designer. Her taste and talent is expressed in the smallest details at Groenvlei.
