In the cellar
The Blanc undergoes fermentation in partly small stainless steel tanks and old French oak barrels. For 8 months a portion of wine spends time on the lees in French barrels, while the
remainder stays in stainless steel and cement tanks, before inevitably being blended and bottled.
In the vineyard
Polkadraai vineyards face the Atlantic Ocean to the south and south-east, thus being constantly fanned by cooling breezes. The 35 year old vineyard naturally allows sufficient sunlight to
penetrate bunch zone for even ripening.
