In the cellar
Good quality grapes are harvested at a full ripeness (25 ÌŠB). The destemmed and crushed grapes are inoculated with pure yeast and fermented dry at 26 - 28 ÌŠC in open top cement fermenters receiving four to six pump overs daily. Alcoholic fermentation is completed in 8 days. The grapes are then pressed and after malolactic fermentation, aged for 12 months in 75% 2nd fill and 25% 3rd fill French oak barrels.
In the vineyard
Mediterranean climate - The summers are hot and dry with cold, wet winters with an annual rainfall of about 800mm. Supplemental irrigation during summer. Well-drained gravel soils.

About the Wine Estate
The Steenkamp family are the fourth generation owners of Groenland and have established a reputation for producing outstanding red and white wines in the fertile Bottelary area near Stellenbosch. Complex varietal wines such as Cabernet Sauvignon, Shiraz, Merlot and a special blend, Antoinette Marie, have placed the estate in the forefront of superior red wine production. Maturation takes place in American and French oak barrels.
