In the cellar

Handpicked grapes were transported to the cellar for crushing. Whole berry fermentation commenced in oak casks and stainless-steel tanks. Twice daily pump-overs ensured the delicate extraction of tannins and flavours. Prolonged skin contact of approximately 14 days were given after fermentation, before pressing. Malo-lactic fermentation followed in 300L French oak barrels. This wine was matured for 17months in barrel, with 40% new oak used.

In the vineyard

The Grapes originate from 2 vineyard sites: Both sites are planted on medium - high potential Tukulu soils with drip irrigation. Site One (Clones CS23, CS46 and CS169) is planted narrow (1,8m x 1.0m) with Vertical Shoot Positioning (VSP) trellis systems. The other site (Clone CS20) is planted wider (2,3m x 1,4m). Annual yield of 5 and 7 tons/ha.
