In the cellar
Fermentation lasted up to 14 days and a further skin maceration period commences before the must is pressed and moved to oak barrels. The wine was matured for 18 months in 50% new 225l French Oak barrels and the balance in second and third fill.
In the vineyard
The grapes were sourced from 8 different sights on the farm and vinified separately.
Ageing
This wine will drink well now, however, it will benefit with some cellaring and can be aged for 12 - 15 years from date of vintage if stored in the correct conditions.

This wine calls for some serious food. Roasted lamb dishes or a fabulous Beef Bourguignon will pair nicely with this classic Cabernet.

About the Wine Estate
Creating excellence in wine has not been a singular pursuit. Our belief is that every aspect must work in harmony: agriculture with nature, people with animals, sustainability with excellence. The old vines are planted to a height of 550m above sea level and with slopes as steep as 45 degrees, creating wines that have exceptional expression and character. Small pockets of low yielding, hand-tended Sauvignon Blanc and Chardonnay vineyards offer up perfect fruit on the cooler elevated slopes. On the slightly lower foothills of the Botmaskop mountains the Cabernet Sauvignon vineyards are tended to. The perfect conditions to grow grapes with a balance of rich and mineral characters.
