In the cellar
This with is made up of different components. All the components fermented separately in stainless steel tanks to retain freshness. After fermentation, a small batch was taken to older barrels to build a round mouthfeel. After two months the different components were carefully blended before bottling.
In the vineyard
The blend comes from three blocks on the Polkadraai Hills with views of both False and Table Bay. Two of the blocks are at an elevation of 300m above sea level and catch the sea breezes lending a lovely minerality to the resulting wines. The last component is from a younger block at the bottom of the slope which delivers more tropical fruit notes and a fresh vibrant acidity.
