In the cellar
The grapes were crushed and destalked to allow for some skin contact. 80% of the juice was racked to barrels (25% new French oak/75% used barrels) and 20% to Amphora to complete the natural fermentation. Malolactic was avoided to retain freshness and bantonage occurred weekly. After 6 months the wine was removed from barrel and was stabilized before bottling.
In the vineyard
The grapes were picked from the old single bush vine vineyard. The grapes were picked in the morning for cooler conditions to protect the fruit from oxidation. Picking from bush vine requires a back breaking effort but it is worth it.
Ageing
This wine should keep for up to five years and the new style typifies the terroir it grows in.
