A youthful ruby colour red with fresh clean fruit flavours, a mixture of red current and blue berries. The wine has a creamy and a pure silk texture with persistent flavours ending with a finely grained powdery tannin structure. The fruit is slow to evolve, with a dry, lingering send-off. This wine will benefit with further bottle maturation.

In the cellar
The wine is matured in a combination of 225 liters oak barrels, 9000 liters Foudre vessels and traditional 4500 liters cement tanks for a period of three years. These different vessels each add a multitude of elements to the wine, ranging from fruity character to subtle wood influences. These elements are brought selectively together to form a harmonious whole, during the winemaking process.
In the vineyard
All grapes on the estate are hand-picked. Once received in the cellar, the grapes are gently transferred by means of gravity to both stainless steel and cement vessels for fermentation. A period of cold soaking follows, which enables rich extraction of colour, elegant aromas and bright flavour. Extended maceration follows at the conclusion of fermentation, which assists in providing the wine with soft texture, increased colour intensity and complexity.
Ageing
This wine can be enjoyed now, however, it will age beautifully for the 20 years from the date of vintage, if stored in the correct conditions.
Food Pairing
This wine can be enjoyed on its' own, however, it pairs beautifully with red meat dishes.

About the Wine Estate
Taaibosch, previously known as Cordoba, is located on the slopes of the Helderberg Mountain in Stellenbosch. The unique position of the 59-hectare estate provides ideal conditions for growing Cabernet Franc, Merlot and Cabernet Sauvignon. At an altitude of 300 metres above sea level, the vineyards benefit from the gentle cooling sea breezes. Cellar master Schalk-Willem Joubert crafts these exceptional wines. The farm follows a traditional hands-on approach to winemaking, focuses on sustainability and is organic in conversion.
