In the cellar
Grapes were kept on the skin for cold maceration for at least 3 days. This also allows some natural fermentation to take place. The juice is then inoculated with a homemade brew of yeasts including three different commercial strains. It is fermented in open stainless steel tanks at temperatures between 24° - 28° C and kept on its skins for 4 - 7 days with regular pump overs and punch downs. After fermentation, the free run juice is drained and the skins are gently pressed. It finishes malolactic fermentation in stainless steel tanks.
In the vineyard
The grapes for this wine come from a section of vineyards on our Golden Tri-angle farm on the slopes of the Helderberg in Stellenbosch.
Ageing
This wine is made to be enjoyed now. However, it will benefit with some cellaring for about 1 to 2 years.

46% Pinotage, 44% Shiraz, 10% Cinsault
Food Pairing
This wine will complement food such as a rack of lamb with a mint dressing or even a thickly cut fillet of beef.
About the Wine Estate
Let's take a journey back to 1692 when Douwe Gerbrand Steyn was granted ownership of Stellenrust. Steyn was a man of many talents, not only did he play a vital role in establishing the East Indian Spice Route, but he was also a master stone mason who helped build the impressive Castle of Good Hope. Steyn was also one of the first pioneers to plant vineyards and produce wine in the Cape. He was truly a man ahead of his time.
Fast forward to 1928, and Steyn's legacy was still going strong. The Stellenrust 'finding rest in Stellenbosch' trademark was registered and still stands to this day. Through the years, Stellenrust has remained a family-owned winery, and it's no surprise that their winemaking skills have been passed down through generations.
Today, Tertius Boshoff (winemaker) and Kobus van der Westhuizen (viticulturist) are keeping the Stellenrust legacy alive. They are committed to producing wines that embody the estate's motto, 'Where excellence meets winemaking'. With each bottle, they continue to capture the essence of Stellenrust's rich history and the passion that Steyn instilled in this beautiful estate.
