In the cellar
The organically-grown grapes were harvested at optimal ripeness, destemmed and crushed in stainless steel tanks. Fermentation lasted for up to 12 days on the skins, after which point 20% of the wine was matured in neutral barrels, and the remaining 80% was matured in stainless steel tanks with French-oak staves to complement the wine’s flavour profile and length.
In the vineyard
From terroir unfettered by artificial pesticides, fungicides and fertilizers. The organically grown vineyards are nurtured in the lime-rich red Karoo soils of the Olifantsrivier region. The certified organically grown grapes are sourced from vines first planted in 1996. The average annual rainfall for these vineyards ranges between 100mm and 150mm.
