The Cape Floral Kingdom is home to the vibrant Malachite Sunbird, frequently spotted flitting around the Protea flowers that thrive alongside our Sauvignon Blanc vineyards. These vineyards are planted at the highest altitude of Simonsig, where the cool ocean breeze from nearby False Bay creates the ideal climate for this cultivar. Our Sunbird Sauvignon Blanc’s aromatic tropical fruit aroma tantalizes the senses, while its refreshing gooseberry notes and zesty green fig flavours invigorate the palate.

In the cellar
Grapes are picked during cool early mornings based on taste to keep track of flavour development in the vineyard and are handled reductively all the way through vinification. Limited skin contact is allowed on select batches to maximise fruit without losing acidity. Gentle pressing and lower juice recovery give rise to greater elegance. The juice is settled brilliantly clear and inoculated with a select yeast strain. Fermentation temperatures are kept low at 12-14 °C to ensure slow fermentation and enhance fruit intensity. After fermentation, the wine is kept on the lees as long as possible (2-6 months) and stirred regularly to enhance mouth feel.
Ageing
Delicious when youthful and the primary grape bouquet is at its best, can be cellared for a further 2 - 3 years in correct conditions.

About the Wine Estate
Simonsig Wine Estate is synonymous with the history of the South African wine industry, the Stellenbosch wine region, and the Malan family name. These elements are intertwined in this family-owned farm, where the late Frans Malan produced the first bottle of our much-loved Kaapse Vonkel, South Africaʼs first Méthode Cap Classique made in the classic bottle-fermented style. He is also honoured for co-founding the thriving Stellenbosch Wine Route, a first in its time. Today, his legacy lives on through his sons, Francois and Johan, and grandchildren Christelle and Michael, the 2nd and 3rd Malan generations at Simonsig Wine Estate.
