The nose of this wine is vibrant with aromas of white flowers and freshly sliced apples. The flavours are bright and linger with fresh fruit and hints of ruby grapefruit. The wine is well balanced, dry with a refreshing yet subtle acidity and a hint of minerality.

In the cellar

Grapes came in cool. ( 12-14 degrees. ). The bunches was destemmed and very lightly crushed. With destemming CO2 dry ice was added and the lightly crushed grapes and juice was pumped directly into the press. It was pressed extremely lightly.( only two cycles to 1 Bar ). ( therefore the very light colour ). With the pressing a drop out enzyme was added. ( 2g/hl ). It was also very lightly sulphered ( 20mg/l ). Juice is than pumped into tank and cooled further down to 8 degrees celcius. The next day the clean juice is taken off its lees. The following day it is inoculated with a yeast @ 20g/hl. Fermentation is done very cool ,( around 12-14 degrees), and fermentation was long and slow. ( 2 weeks ). After fermentation wine was racked of its lees. While racking off fining was done to make proteienstable. It was then filtered very lightly. After that it was made titrate stable. No acid or wood was added to the Rose and is all natural acid. After made titrate stable the wine was bottled a week thereafter.

In the vineyard

The Cab Franc Rose was made for the first time in 2021 as a 100% Cabernet Franc specific Rose. It is from a lower lying Cabernet Franc Vineyard on the farm which battles to get full optimal rypiness for our normal Cabernet Franc and therefore now designated for a 100% Cab Franc Rose. The vineyard works perfect because it picks up sugar very slowly. It is a 312 Cabernet Franc clone planted on a Richter 101/14 rootstock. Planting direction is East/West. It was picked on 28/02/2022 at a sugar level of 22 balling. All the grapes is handpicked and put in a cool store. It was then taken the next day to the cellar very cool at around 12-14 degrees Celsius.

Ageing

This wine can be cellared for 3-5 years from date of vintage if stored in the proper conditions.

Food Pairing

This wine pairs well with Sushi, Norwegian Salmon, Watermelon, rocket and Feta Salad.

About the Wine Estate

“Rainbow’s End” is the name of the Malan family’s wine estate near Stellenbosch. It is a name that conjures up associations, and among these are the divine promise of sunshine after rain, of commitment to the earth, of a destination and a pot of gold. Their winemaker, Anton Malan, treasures Rainbow’s End’s unique terroir. He has no desire to place their wines into a specific category of conventional wine style (such as Old World or New World styles). They treat each vintage year separately and make what the season and the specific terroir of a specific vineyard block offers. Every year they adapt their winemaking techniques slightly in order to ensure the best possible result irrespective of a particular style. They create a unique product and wine style annually – the best that the season can offer.
