In the cellar
Grapes were harvested by hand and whole-bunch pressed to ensure cleaner fruit expression in the wine. Fermentation was done in stainless steel tanks, where juice handling was quite reductive, which added complexity to the wine. The wine was kept on its primary fine lees for a month to give a full mouth feel.
In the vineyard
Moderate winter conditions with limited rainfall lead to an excellent foundation resulting in even budbreak. Calm winds during season lead to good fruit set and lush canopies. The 2023 harvest was characterised by excessive rainfall and higher humidity levels. White and red cultivars ripened simultaneously and resulted in a challenging harvest. However, picking of the grapes at their ideal ripening stage contributed to great primary aromas and development of berries to produce outstanding quality.

Food Pairing
Delicious on its own and versatile with food, the first choice being anything from the ocean as this wine was born to an island rich in seafood variety and abundance. Think heart-warming pasta dishes and roast chicken in winter, while delicate seafood and zesty desserts will pair wonderfully well in summer.
