In the cellar
Grapes are destemmed, crushed, and then gently pressed in the cellar. The juice is allowed to settle overnight, after which is is racked into brand new, 225L French oak barrels where they undergo fermentation. After fermentation, the wine is left in the barrel for a further 8-10 months to allow for the oak flavours to fully integrate into the wine. No battonage is done, and the wine does not go though MLF.
In the vineyard
Grapes are carefully hand picked from Louisvale's top Chardonnay blocks early in the morning. They are placed in the cold room at 8 degrees celcius overnight, before being processed in the cellar. Our Chardonnay vines are planted on Oakleaf soils. Warm days followed by cool nights with a breeze coming from the ocean allows slow and consistent ripening of our Chardonnay grapes.
