In the cellar
The grapes are harvested in the early morning hours to ensure optimum temperatures and minimise oxidation of the juice to preserve the natural acidity and green flavours. After 2 weeks of fermentation at low temperatures we keep these wines on the lees. This releases the typical tropical flavours.
In the vineyard
Our Sauvignon Blanc wines are made from selected vineyards on the farm. These vines located 203m above sea level flourish in the cool climate and the “koffie klip” (Iron Ferricrete) soils. The 18-Year-old vineyard with above normal high density of 4000 vine per Hectare (20250 vines in total) provides us a yearly production of 8tons/Ha. Strong vigorous growth keeps the grapes protected and the biomass of organic material keeps the
soil damp which all contributes to our recipe of producing exceptional
quality wines.
