Jordan’s gardens and willow trees are home to the Cape Dwarf Chameleon. Chameleon is a wonderfully apt name, expressing the changing flavours of these fruit-driven blends’ component varieties.
Mature vineyards yield opulent fruit with plum, rich blackberry and mocha flavours. Framed by generously rounded tannins and spiciness from maturation in French oak, this wine is seductive from start to finish.

In the cellar
Fermented in overhead retort-shaped, stainless steel fermenters. Pump-overs were done three times daily during fermentation. The use of gravity and gentle pressing ensure full-flavoured wines with soft, balanced tannins. This wine spent 16 months in second and third fill 225 litre French oak barrels.
In the vineyard
The Merlot was harvested at 23.5°B between the 23th of March and the 4nd of April 2022.
