In the cellar
The grapes were lightly crushed and gently pressed. The juice was transferred to two stainless steel fermenters where it underwent spontaneous fermentation (wild ferment). The two tanks ran at different temperatures one at 13 degrees and the other at 18 degrees. The wine was not allowed to go through malolactic fermentation and was left on the lees until bottling took place.
In the vineyard
The vines for this wine are grown on the lower slopes of the Simonsberg, the fruit is grown in alluvial soils with high quartz content. We believe this adds to the complexity mineral character of the wine.
Ageing
This wine was made to enjoy now, however, if stored in the correct conditions it can age for a further six years.

About the Wine Estate
Glenelly Estate is located on the lower slopes of the Simonsberg mountain, in the heart of Stellenbosch. It was purchased in 2003 by May de Lencquesaing, former owner of the iconic Chateau Pichon Longueville Comtesse de Lalande in France.
