In the cellar
This wine is made up of two batches; the first harvested at a lower sugar to ensure freshness. It is fermented in stainless steel tanks and then matured in small 2nd and 3rd fill French oak barrels. During fermentation, pump-overs were done three times daily. The second batch is harvested riper and matured in a 2750 liter vat with specially selected French oak staves.
