Simonsig Mr. Borio’s Shiraz 2019

Simonsig Mr. Borio’s Shiraz 2019

R150,00

The wine displays a dense opaque colour with a plum centre. Delicious notes of plum on the nose and succulent black berry fruit. Dominant black cherry fruit infuses with subtle hints of cedar oak that states a well-integrated wine. A repetition of dark fruit on the finish.

More Information

In the cellar

The 2018 vintage was really challenging, due to the prolonged drought which was accompanied by water restrictions, and which some believe to be the worst in 100 years. The expertise of the vineyard team and cellar were definitely put to the test by the warm and dry climatic conditions. We adapted our practices both in the vineyard and the cellar, to decrease the effect of water shortages. The dry weather throughout the season did have its advantages, as vines were healthy, with little or no pests or diseases being recorded in most regions. The dry, warm weather resulted in smaller berries with great intensity. The Shiraz harvest did not disappoint, delivering wines with an abundance of fruit and beautiful balance.

In the vineyard

The grapes were picked by hand over the days of 14 -15 March 2018 on a ripeness level of 24 -24,5 balling. The grapes were destemmed and left for two days to cold soak. Fermentation lasted between 9 and 12 days on skins before pressing. Malotactic fermentation occurred in tank before taken to barrel for ageing.

Ageing

Perfect for drinking now, but further aging until 3 to 5 years from vintage datewould be highly rewarded.

Food Pairing

About the Wine Estate

Simonsig Wine Estate is synonymous with the history of the South African wine industry, the Stellenbosch wine region, and the Malan family name. These elements are intertwined in this family-owned farm, where the late Frans Malan produced the first bottle of our much-loved Kaapse Vonkel, South Africaʼs first Méthode Cap Classique made in the classic bottle-fermented style. He is also honoured for co-founding the thriving Stellenbosch Wine Route, a first in its time. Today, his legacy lives on through his sons, Francois and Johan, and grandchildren Christelle and Michael, the 2nd and 3rd Malan generations at Simonsig Wine Estate.
